Raspberry Protein French Toast Casserole

Ingredients

10oz tray mini croissants, cut into bite sized pieces
3 large eggs
1 1/2 cup egg whites
1/2 cup almond milk
1 1/2 FLEX scoops vanilla protein powder
1 tsp vanilla extract
pinch of salt
dash of cinnamon 

12oz package raspberries, divided
6oz fat free cream cheese
1/2 scoop FLEX vanilla protein powder
2 tbsp almond milk
1 tsp vanilla extract
1 tsp lemon juice

Directions

  • Preheat oven to 350° and grease a large casserole dish.
  • Spread croissants across bottom of dish.
  • Mix together eggs, whites, 1/2 cup milk, 1 1/2 scoops protein powder, 1 tsp vanilla extract, cinnamon and salt. slowly pour over croissants and top with 8oz raspberries.
  • Bake for 45-55 min.
  • While baking, add remaining ingredients to a bowl. using an electric hand mixer, whip together until smooth and creamy.
  • Spread the cream cheese across the top and enjoy!
