No Bake Protein Brownie Cups
Ingredients
1 cup pitted medjool dates
1/4 cup peanut butter
1/4 cup sugar maple syrup
1/2 cup FLEX Brands chocolate protein powder
1/4 cup unsweetened cocoa powder
Chocolate coating:
1/3 cup dark chips
2 tsp coconut oilRainbow sprinkles
Directions
- Add dates to a food processor and pulse on high until you get a sticky paste.
- Add dates to a large bowl along with peanut butter, maples syrup, protein powder, and cocoa powder. Use a rubber spatula to fold everything together until you get a sticky dough.
- Press dough into 5-6 muffin tins, I used a silicone muffin tray but if you don’t have one make sure you use muffin liners or else the dough will stick to the tray!
- Add chocolate chips and coconut oil to a microwave safe bowl and microwave in 30 second increments until smooth and melted.
- Pour chocolate on top of dough and add sprinkles. Freeze for 2 hours or overnight. Note that this is not meant to freeze the dough, just allow it to set!
